Peanut Butter Oatmeal Cookies - 360 Cookware

We made cookies on the 360 jelly roll pan that is 13.8”x10” with a lip (We also carry the 360 Cookie Sheet (17.5”x14.22”). It’s made for baking and for roasting things like veggies on a grill. Very versatile. It’s two layers of surgical-grade stainless steel with an aluminum layer sandwiched in between for even heat conduction. 

And yes! It did heat and bake our cookies more evenly than either the aluminum pan or the non-stick pan we used alongside it. The bottom was slightly darker than the top with the 360, much darker with the aluminum, and nearly burnt with the China-made non-stick at the same temperature and time. 

we used parchment paper, but the 360 cookware is naturally non-stick due to the dry sanding process they utilize in making all their cookware. The dry sanding makes the stainless steel cooking layer non-porous so that no chemical coating is needed: no PFAS, PFOZ, PFOA, or PTFE needed! And clean-up is easy!

Peanut Butter and Oatmeal Cookie Recipe:

  • 1/2 cup butter, softened
  • 1 cup packed brown sugar (I use light)
  • 1 cup granulated sugar (I use natural cane sugar)
  • 3 eggs
  • 1 teaspoon vanilla 
  • 2 cups (1 pound) peanut butter
  • 2 teaspoons baking soda
  • 4 1/2 cups rolled oats (if you want the cookies less chewy (heartier texture) then pulse them a few times in a food processor)
  • Optional: 1 cup raisins/m&m candies/chocolate chips (I usually mix them all in a one cup measure) 

Pre-heat oven to 350 degrees.

Beat butter and sugars together in large bowl  until pale and fluffy (I use a stand mixer). Beat in eggs, vanilla, and peanut butter until well-blended. In a separate bowl, stir the baking soda into the oats. Then add the oat mix to the batter until a stiff dough forms. Stir in raisins/candies/chips. Form balls of 1/2 cup dough. Place balls on parchment paper over 360 Cookware Cookie Sheet or Jelly Roll Pan. Flatten to 5” diameter and leave room for cookies to spread another inch while baking. Bake at 350 degrees for 12-14 minutes until edges brown.
